UNIK at home : Upside down pear cake

This delicious, gluten free, vegan upside down pear cake is super yum, easy to make and looks as beautiful as it tastes. You can use apples instead of pear if you prefer and choose to add in berries for an added touch of sweetness. 
 
2 x ripe pears
1 cups of buckwheat flour
1 cup of coconut flour 
3/4 cup of brown sugar
125g coconut oil
2 cups of plant based milk
2 teaspoons baking powder
2 teaspoons of vanilla essence
2 teaspoons of cinnamon powder
Pinch of salt
 
Pre-heat oven to 180°C
Prepare a cake baking tin with baking paper.  Sprinkle cinnamon and little bit of sugar over the base. Slice one pear into one eighths and place on the base of the cake tin - set aside. In a large bowl mix coconut oil, sugar, vanilla essence together, add flour, baking powder, cinnamon, a pinch of salt and milk - mix together. Dice the second pear and add to the mixture and pour into the prepared cake tin. Bang the cake mixture in the tin on a board to get the air pockets out. 
Bake in the oven for 50-55 min
It’s a little tricky to test if this cake is ready as you may put the skewer through a cooked pear and the skewer will come out with pear on it, therefore will not look cooked. You just have to trust your instinct. The cake should have a golden brown colour and be firm to touch
Set aside for 5-10 min before turning upside down onto a cooling rack. Remove the cake tin and the grease proof paper to reveal your beautiful, delicious upside down pear cake!
