UNIK tips 

.Healthy Buckwheat Pancakes 

 

These pancakes are super easy, healthy and tasty!  This recipe is vegan, but you can choose to use 2 eggs instead of chia seeds and your choice of milk instead of plant based.

In a mixing bowl soak 2 tablespoons of chia seeds in 6 tablespoons of water and wait a few minutes until the mixture thickens. 

Add 2 cups of buckwheat flour and 2-3 cups of plant based milk depending on how thick you like your pancakes. Add a pinch of salt, 2 teaspoons of baking soda and mix together.  I like to use the hand blender to mix thoroughly so there’s no lumps. Once the mixture is smooth and the consistency you like it, heat a heavy based or non stick fry pan on a medium heat, add coconut oil for frying and spoon your mixture into the pan.  When air holes appear on the top of the pancakes, flip them over until nice and brown et voilà!

Serve with your choice of topping, but my favourite is a generous drizzle of honey, a squeeze of lemon and a sprinkling of cinnamon on top.
